TitleCheesy Corn Chowder
Ingredients5 slices bacon (cut to bitesize pcs - scissors work great)
1 large onion, diced
1 red bell pepper, diced
1 yellow pepper, diced
1 orange bell pepper, diced
corn niblets from 5 ears of corn, or one 5 lb bag frozen niblets
1/4 cup flour
2 cups chicken stock
4 cups Half n Half
1 cup Monterey Jack cheese, shredded
1 cup Pepper Jack cheese, shredded
MethodSaute bacon and onion until onions are translucent*.

Add bell pepper to pan, stir well and cook until softened*.

Add corn. Stir until well combined. Sprinkle with flour and cook for at least 2 minutes*.

Add chicken stock and Half n half. Stir continuously until heated through and slightly thickened*.

Just before serving add cheeses in small amounts to melt..

*Be sure to add salt and pepper at each stage, tasting as you go.
