TitleCauiliflower Garlic Mash
Ingredients3-4 cups cauliflower florets
6 Tbsp butter
2 Tbsp heavy (whipping) cream
4 Tbsp grated parm (or romano)
2 Tbsp creme fraiche (or sour cream)
2-3 Tbsp cream cheese
1 tsp minced garlic
salt and pepper to taste
MethodBring salted water to a boil and cook cauliflower until tender - 4-5 minutes. Drain well and either press or return to hot pan to remove remaining moisture. Add to food processor along with all other ingredients. Pulse several times and then process until you have the creamy texture you desire. You can serve immediately or reheat when ready to serve.
