I have a GRILL!
No, I didn’t mislead you – while I have suggested and talked about many a grilled item, if you search, you will find that I almost always mention my brother, Jeff. In fact, the grill I now have was his… Inspired by Jeff’s great Asian-flavored beer can chicken, I came up with my own version to inaugurate the grill. In about a third cup of canola oil, I mixed in 2 teaspoons chopped garlic, about the same of chopped cilantro, fresh ginger root, and lemon grass! A couple Tablespoons of teriyaki sauce and a dash of hot red pepper sauce… This all sat in the fridge for a few hours to meld the flavors.

Cleaned and dried the 4-pound bird, then stuffed a halved lemon in the neck portion. Drizzled the entire piece of poultry, inside and out, with the oil blend. Wrapped it well, and then let it sit in the fridge overnight.

Okay, you know how to do a beer-can chicken, right? Drain any marinade (save for basting!) and pat the bird dry. Grease a half full can of beer, and slip into the, uh, tail cavity. Balance on your indirect heat (no coals or burners on directly underneath) like a tripod – using the can, and the two legs.

Cook over medium-high, cover down for about 1-¼ hours, until internal breast reads 165F, and thighs are at 180F. Let rest 10 minutes, at least, until carving.

Juicy, flavorful, and easy! I love my new toy!!!! I'd show you a picture, but it looks exactly the same as Jeff's did... YEAH!
