Nasty weather this weekend?
Take advantage of it! That’s the perfect time to do some slow cooking and make your home smell all warm and cozy. No Knead Bread is full of flavor and is super simple (“so easy a four year old can make it”), but it takes about 21 hours. So start that the evening before your big dinner. This hearty Irish Stew with beef (or lamb if you prefer), uses the traditional ingredient of a stout Irish beer. A little chopping, browning of the meat… and then your large slow cooker takes over. Mine wasn’t big enough, so I used my Dutch oven at 275F for not quite three hours… Tip – after you’ve browned your beef, heat your tomato paste in the pan, and then use the stock to deglaze wink Picks up all those leftover beef flavors, “wakes up” your tomato paste, and you won’t need the cornstarch at the end.

This warming menu has very little “hands on” effort. If you must, you can still clean the house or whatever… then you can enjoy your beautiful reward! Fresh baked bread with a sumptuous stew – who needs sunshine?
