Don’t forget dinner!
In our household, Christmas Day seems to fly by in a rush of activities. Too many times, one or both my parents are in the kitchen fussing over dinner, and miss one of those “special moments”. Wouldn’t it be nice if dinner was something that sort of tended to itself? Well, if you haven’t made up your mind yet, this is one suggestion - Danish Roast Pork, Roasted Potatoes, and Red Cabbage with Apples. Even if you didn’t do any prep ahead of time, this meal can be done in about 2 hours – most of that unwatched in the oven or covered on the stove! You can definitely make your compound butter the day before, and even slice your cabbage and chop your apples – IF you wrap your cabbage well and soak your apples in lemon water. If you really want it easy that day, I bet you could even sear the cut sides of your potatoes and deglaze the pan (as directed) the day before – but make sure you have room in your fridge for your roasting pan!!! Don’t forget to bring it back to room temp before you continue… After that, its rub your roast with the butter blend, set it on the potatoes and put it in the oven. Dump your cabbage and drain your apples, add a couple ingredients to your pot, cover, and simmer. The time for stress ended when you wrapped that last present on Christmas Eve – enjoy the day.
