A plate of gnocchi, spinach and butter sauce – practically peasant food, right? Not when you make it the way I did… All credit goes to Savoring Time in the Kitchen - BUTTERNUT SQUASH gnocchi were incredibly easy to make following her guidelines. I’ve made Butternut Squash Ravioli, so I knew I would love the flavors. I would have been happy with simply a browned butter sauce, but the addition of spinach sauce not only added to the nutrition, it took the whole dish over the top wink

Ok, mine didn’t have as pretty a shape as hers – but taste is the thing… My original intention was to make this for New Years’ Eve – but life sort of happened… Even a week into the New Year, what a great way to start 2012’s culinary adventure?! Stick around ladies and gents – it’s gonna be a fun year.
