Translation: Who eats well, lives well. So, lets go for it – the easy way. Six ingredients, INCLUDING olive oil, salt & pepper (and I counted those individually)! Can you slice cheese? Seriously, that's about the only skill required for this one – and let me tell you, this is not only scrumptious, it is impressive. May I present Mozzarella Stuffed Sweet Peppers - no, not those big bell peppers – those slender delights generically referred to as 'italian peppers'. Fifteen, twenty minutes prep, toss in the oven, and man, you're in for a treat.

Remove the tops of the peppers and most of the membrane by running your knife around the stems, and shake out as many seeds as you can. If you are truly fussy, you can rinse them under water to get those stragglers... Fill each pepper with little bits of moz, stuffing as full as you can. Dump some of your best home-made marinara sauce (or even a quality jarred marinara sauce) into the bottom of your baking dish, arrange your peppers, drizzle with olive oil, season with salt & pepper... then bake.

While these are incredible all on their own, I just couldn't resist completing a fantastic menu with a grilled steak, topped with a garlic butter, and a side of spinach pasta in the same butter sauce wink Oh yeah, Momma's eating well today...
