Oliviaa's Perfect Pickles

Preparation Time
30 mins prep, 3 hour wait, about 30 mins assembly

2 quarts plus

Ingredients
9 salad size cucumbers, sliced 1/4 to 1/2 inch
3/4 cup kosher salt
3 Tbsp mustard seed
3 Tbsp chopped garlic (roasted if available)
1 Tbsp Turmeric*
1 Tbsp black peppercorns
2 cups white vinegar
2 cups apple cider vinegar
1/4 cup sugar
1 Tbsp red pepper flakes*

Method
Layer cukes in a wide bowl, sprinkling the the kosher salt and a tiny bit of the red pepper flakes as you go. Top with ice cubes, up to three trays, and let set with a heavy plate on top for three hours.

Rinse well. Rinse well. Rinse well.

Remove as much moisture as possible and pack into heat resistant jars.

Combine the remaining ingredients and bring to a full boil, then immediately remove from heat. Pour brine over jarred cuke slices, and allow to set for at least an hour. Wipe the rim and seal. Once room temp, place in the fridge. Ready to eat once fully chilled, but they get better as they age!
