Sometimes you don’t want bread
When I made chili a while back, I looked at the loaf of “seven-grain with honey” bread on the counter, and it just wasn’t right. Cornbread was an option, but even that seemed too heavy. My grandmother’s recipe for biscuits used buttermilk – I don’t stock it, and didn’t feel like going to the store. Besides, the chili was almost done!

So off I went to the search engine…The “Recipe Dude" saved my day with his Fast, Easy Biscuits - almost too easy. I skipped the usual “cutting the butter into the dry ingredients” step by simply whipping it all together in my mixer. Well, he hadn’t actually mentioned that step, and I was in a hurry. I didn’t roll and cut, either – after adding the liquids, I simply grabbed small handfuls, roughly shaped, and then placed on a parchment paper lined sheet to rest. With the oven preheated, in they went. I can’t honestly say that these were the best or prettiest biscuits I had ever had – but for about 20 minutes, start to finish, they were awesome! Somehow, they all disappeared that night wink
