Ham ‘n’ Cheese Pasta Salad
My neighbor gave me a couple of ham steaks – how nice! Normally, I would pan fry or grill, and serve with potatoes, maybe applesauce, and a salad… Just one catch – I didn’t have any potatoes and didn’t want anything hot for dinner (We're right in the middle of the heat wave tongue)

Confessions of a Seafood Lover…
I have cooked shrimp, scallops, crab, even lobster – but I have only once attempted a filet of fish!

I can’t explain why – maybe because it seems so delicate? I’ve recently found a couple recipes that have me convinced to try…

June Fourteenth…
It is Flag Day – raise Old Glory! It was also my Grandma’s Birthday (Happy Birthday, Lillian!), and it is brother Jamie and Carole’s 18th Anniversary…

It reminds me (I’m rubbing my chin, wishing that the vision would get foggy – a la Letterman wink )…

“A good cook knows how to wing it…”
That’s a quote from Mary Ann Esposito of ‘Ciao Italia’. It’s true.

I remember a few years back when my parents were going out of town for Thanksgiving. We decided to forego the big family dinner – “every man for himself” – and I thought that I was going to get a break and simply enjoy the parades and football games. WRONG!

Don’t bake when you’re tired
A while back I raved about a lime cheesecake, chocolate crusted cupcake that Papa made for his own birthday gathering; at that time, the recipe was not available online. I’ve found the link, but first I’ve got to tell you a story…

Another great use for Garlic
Summer is coming, and if you have pets, it’s time to prepare! I’m not sure about the rest of the country/world, but the last two summers in Upstate New York have been absolutely HORRIBLE for fleas!! Even the vets were having trouble controlling them with the best medications at their disposal. While it’s not 100% effective, GARLIC is an amazing and simple aid in the battle.

Yes, I know I’m a little off my normal track here – but it is a useful bit of knowledge nonetheless. Fleas do not like garlic. People who eat garlic on a regular basis are less likely to be bitten by fleas; the same goes for animals.

What are the 6 things (besides coffee/tea, milk, eggs, sugar, flour, salt and pepper) that you absolutely have to have in your kitchen?
My friend Sue posted this question on Facebook, and the results were amazing. I’m posting it here now (with her permission), titled simply“Six Things” in the Forum section, and I hope your responses will be as forthcoming. Come on – take a moment and share! I assure you, it will be interesting reading – and no, I won’t be posting MY six until at least a few of you have responded tongue

The most paranoid person I know…
He’s just been a victim of identity theft! He keeps all of his receipts until he gets his bank statement, and then tears them all up into tiny little pieces.

Two checks per month – one for rent, one for insurance. The card never leaves his possession.

Yet in the last month someone made a deposit for say, $100. The next day, they withdrew $150. The amount of both in and out transactions kept growing, and at one point there was over a grand deposited. As of today, there was a negative balance of almost $100 - which is the only reason he caught it… before he scheduled a meeting with the bank examiner.

Personally, I’ve never worried about identity theft – hey, if someone wanted to steal my financial identity they were pretty bad off… As this hit close to home, I wanted to share the reminder…

Don’t let someone ‘cook your books’!

Appetizers for Easter
That’s what I’ve been requested to make for the family gathering this year. Many adult friendly and a few kid friendly ideas came to mind – but how do I make those things ‘sort of similar’, and still blend in with the menu?
