A lazy way to (sort of) make Pieroghi
As I’ve told you before, for several years we all gathered as a family to make these wonders. I don’t have a strict and fast formula for the filling, but here’s a great recipe for the dough that works every time. This year, I can’t even schedule a PHONE CALL with the now teens, let alone a day to get together. So, I am taking a different direction - I’m making a Pieroghi Casserole.

Chocolate and Pumpkin?
Yes, I know – another story about unexpected vegetables… But trust me, you’ll want to know about this one. As always, Papa made cupcakes for Ris’ birthday –
M Cakes
The white ones are a lemon cake mix, with a frosting made with cream cheese and melted white chocolate. Easy enough, right? The chocolate ones are made with a devil’s food cake mix and 15 oz of pureed pumpkin. That’s it – NOTHING else! In fact, the recipe from Hungry Girl specifically warns many times about NOT adding anything else. They are rich in flavor and nutrients – and no, you’d never know what was in them! With only 181 calories per cupcake, and the total simplicity, you’ve got to try this. To top the chocolate cakes, he simply drizzled melted dark chocolate – DON’T cover the whole top (makes them crunchy and hard to eat – he tried that with my birthday cake wink ), just artistic scribbles. And those “M’s” for the guest of honor are made with the same. Creative guy, ain’t he.

What’s your favorite One-Pot Meal?
I grew up eating what my Mom called Mac n Cheese – which was made with ground beef, onions, sometimes green peppers – and Velveeta and tomato soup. Yes, elbow noodles.

Don’t get me wrong – it is pretty awesome! In fact, you should try it. However, to my delight, the recipe can be doctored in so many ways!

I have made this same type of dish using ground turkey, cream of celery soup, poultry seasoning, and celery – along with whatever pasta was available. For this version I used Swiss cheese? It worked.

Or how about ground pork – with onions, garlic, salsa, and Monterey Jack? Shredded tortillas instead of pasta…

The point is that it is easy to create a wonderful meal, no matter what ingredients you have.

So what’s for dinner tonight?

Have you heard about the “Twitter Gourmet”?
Wes Martin is a fairly regular guest on the Rachael Ray Show, and his mission is teaching improvisation in the kitchen. He accepts the first five ingredient “tweets” from viewers, and with a well-stocked pantry, he uses those items to create a great meal - in 30 minutes, no less. Now, I’m issuing a challenge to you – I’m not going to give you a time frame - but wouldn’t this be a fun experiment? Ask your family to come up with varied/favorite ingredients you MUST USE one night and create a meal that they’ve never had before! Or even more fun – invite some friends over for dinner, and have each bring a “mystery” ingredient to incorporate. Oh, and you CAN NOT do a web search!!!! It might cause a few minutes of stressing, but you will learn an incredible lesson – CREATING is fun! The next time you look in your freezer or pantry and say to yourself “I have no idea of what to make”, that idea will pass quickly. You’ll feel an air of confidence that you never have had before!

“OMG!! I forgot to get…”
Or maybe “I don’t have enough…?!?!” That was my case on Christmas morning – I had all the ingredients for a double batch of the requested Chicken dip, EXCEPT for the cream cheese. I could have wimped out and made a single batch, but as the cream cheese was used primarily for texture, I subbed a cup of cottage cheese for the 8 oz of cream cheese I lacked – no one knew the difference! We all run short or forget something once in a while – just don’t panic.

Yes, she’s married to THAT Seinfeld wink She first came onto my radar a few years back with her book, ”Deceptively Delicious…”, designed to sneak in more vegetables for your kids. As I know many an adult who doesn’t eat enough of them, I use some of these tips for all age groups.
