I love America’s Test Kitchen, and have and will encourage you to visit their site. Current season recipes are available in exchange for your email address, and everything on the site can be yours for a price comparable to a magazine subscription… But I can’t usually give you direct links!This time I can, thanks to Chris Kimball’s appearance on the Today Show. Kebabs four ways: Barbeque Chicken (with a bacon paste!), Luau Pork Chops, Lemon & Rosemary marinated Beef Tips, and one of my long time favorites, Grilled Shrimp finished in a spicy Lemon Garlic Sauce. If for no other reason, you should check out the techniques used. For example, did you know that if you nestle your shrimp head-to-tail, alternating on the skewer, that they take a little longer to cook and you have less chance of turning them to rubber? Or that a sprinkle of sugar – on shrimp(?) – helps aid in caramelizing in a shorter time? And finishing the cooking in the sauce not only gives them more flavor, but again helps prevent overcooking… I’ve made these shrimp several times, and they ALWAYS turn out perfect! I must tell you that my family prefers ATK’s Charmoula sauce with the shrimp. Same method, just that the sauce has red bell pepper, red onion, cumin, paprika, cayenne… Like I said, please check their site - you won’t regret it. These gems are just the tip of their creativity and wealth of experience.
