Creamy AND Crunchy, Hot AND cold…
Any guesses? Fried Ice Cream!!! I haven’t had this in years, and with Cinco de Mayo just around the corner… The CBS Saturday Early Show presented this as dessert when Chef Edwin Mateo made his Cinco de Mayo Feast, and since they reminded me of this delight, I’m sharing their recipe. If you haven’t tried this, it is a small ball of ice cream with a crunchy, cinnamon flavored coating that is deep-fried. It literally IS fried ice cream! Often it is served with a honey sauce, which he doesn’t provide the recipe for, but his had tequila, anyways wink Just use some honey (you can dilute/soften with some melted butter, maybe a dash of cinnamon if you’d like…) Other sites recommended chocolate sauce, whipped cream, and/or simply a cinnamon sugar sprinkled on top. (but come on, you've got to go for the "ooey, gooey" options). The kids can get involved in crunching the corn flakes (yes, the cereal), mixing the dry ingredients, making the balls of ice cream… Obviously, an adult needs to do the deep-frying, but that just takes a couple minutes. Come on – wouldn’t this be a novel treat?!? This is best if it is prepared the day ahead, so everything freezes really well – THINK of the anticipation! (oh, and the rest of the menu looked pretty good, too)
