Seedless Tomatoes with Great Flavor
This one’s for my sis-in-law. Anita will not eat any fruit or vegetable with small seeds – this eliminates strawberries, raspberries… and often, even tomatoes! She doesn’t like the way they feel in her teeth, and I’m sure she’s not alone, so here’s a great tip. From America’s Test Kitchen (current season, so you can get it for just logging in!), this is awesome! In their recipe for Cherry Tomato Salad with Mozzarella and Basil, they showed a great technique. Using their base amount of two pints of cherry tomatoes, you first slice or quarter them. Sprinkle with ¼ tsp salt and ½ tsp sugar, and let rest in a bowl for 30 minutes. This not only flavors them, but also releases much of the excess moisture (in case you haven’t noticed, I’m a big fan of salting!). Place your tomatoes and the accumulated liquid into a salad spinner! In less than a minute you will have “seed free” tomatoes, and a lot of excess moisture removed. DON’T throw that liquid away! The “jelly” of a tomato contains a lot of the flavor – instead they passed it through a strainer, reduced it with some other great ingredients… I’m not going to give away all of their secrets, but they are there.
