Appetizers for Easter
That’s what I’ve been requested to make for the family gathering this year. Many adult friendly and a few kid friendly ideas came to mind – but how do I make those things ‘sort of similar’, and still blend in with the menu?The first thing that came to me was Flatbread Topped with Mint, Feta, and Lamb , by Martha Stewart. All the adults had enjoyed it a couple years ago, and as much as I hate to repeat myself… wink Lamb seems appropriate for Easter. Then I started to think about what the kids actually ATE: mashed potatoes, cheese… then the solution seemed obvious! ‘Polish Pizza’! There are a lot of variations out there, but GroupRecipes’ version is the closest to the kind I knew growing up – Pagache was a term I’d never heard, but that is what this is, and what I like! I’ll experiment with the other suggested flavorings down the road… Both can be cut into little squares, and that’s my plan. I’m thinking about adding some thin sliced kielbasa on half of the potato-based pie, just to add some extra flair... So? What are you making?
