After the meal is over…
My family usually serves ham for Easter, so I’m prepping for the much anticipated leftovers.

Ham sandwiches are great, but I want to step it up a bit this year – so here’s what I’m thinking…I love the idea behind this recipe for Ham Croquettes, but as they readily admit it’s a bit old-fashioned, labor intensive, and requires frying. Not a good combination. Here’s my idea – make the white sauce as they describe. Add your cubed ham, any leftover green or yellow veggies (cut into bite-sized pieces, if necessary), the seasoning they suggest – and then serve it over any leftover rolls or potatoes or noodles... I’m thinking a good amount of cheddar cheese (added to the sauce before the ‘chunky’ ingredients) might just put this over the top! Voile! A new classic is born.
