A summer, Italian-style delight
While fresh tomatoes abound, here’s a great idea to try – it takes just a few minutes to assemble, and while it tells you to cook in an oven, using a well sprayed baking sheet or better yet, a disposable aluminum pan, I’m sure that these would work well on the grill.We’ve all heard of Jalapeno Poppers – why not Italian Poppersquestion? With a blend of your favorite pizzeria flavors – moz, basil, garlic, even prosciutto – this mixture is placed in your halved and cleaned/scooped out tomatoes, then baked until golden brown. If you really want to “gild the lily”, you can wrap them in small segments of puff pastry dough, or even easier, set them in those little tart shells that you can buy. This idea, of course, requires that you use an oven frown Great as a snack, an appetizer, or even a side dish (though I’d recommend larger tomatoes for that purpose – just imagine this served next to a grilled steak wink. A lot lighter than your typical pasta dish, this can still satisfy your “goomba” cravings! PS: When you serve this, a balsamic drizzle (concentrated balsamic vinegar) on the side will take this over the top!!!!
