Yes, she’s married to THAT Seinfeld wink She first came onto my radar a few years back with her book, ”Deceptively Delicious…”, designed to sneak in more vegetables for your kids. As I know many an adult who doesn’t eat enough of them, I use some of these tips for all age groups.The key to most of her recipes is pureeing your vegetables, and then camouflaging them with other great flavors. Now, I love me some Balsamic Chicken - this recipe makes it in an interesting and healthful way. Using whole wheat flour to coat, no egg, and adding a broccoli puree… Well, I can’t wait to try it! But this one is even better - Caramel Popcorn - with Sweet Potato!!! You long time readers know I’m a big fan of this super food. As I write this, the recipe posted is incomplete – earlier in the day it was about pasta! Bad job, GMA. I’m pretty sure that you combine the glaze, then toss with the popped corn and bake on a sprayed/buttered sheet pan, stirring regularly for about half an hour… I’d think about adding some almonds or other nuts at this point if you’d desire. Check out some of Jessica’s recipes – especially if you have a hard time getting veggies into YOUR “kid” - of ANY age.
