I've been over-doing the carbs lately - trust me, I have. Time to lighten up a bit. Super simple, this Apple Cheddar Quesadilla hit the spot.
Whole wheat tortillas, slightly tart apple (I used red delicious), sharp cheddar... No meat was requested, but as I had a couple slices of ham to use up, that seemed to be a perfect addition (try chicken or turkey as well)!
And you know that Cranberry Mustard I made? THIS is what it was for. Any mustard would do, but the first time I make something, I at least TRY to follow the directions But hey - no fancy panini press or grill required - just lightly oil a fry pan and press firmly on the top with a spatula until the cheese has melted, then carefully flip.
Tasty warm or at room temp, I made a few and brought a couple into work for light lunches. 30 seconds in the microwave brought all the flavor back - and made my co-workers jealous!
