Ham ‘n’ Cheese Pasta Salad
My neighbor gave me a couple of ham steaks – how nice! Normally, I would pan fry or grill, and serve with potatoes, maybe applesauce, and a salad… Just one catch – I didn’t have any potatoes and didn’t want anything hot for dinner (We're right in the middle of the heat wave tongue)A couple of weeks ago I had made an Antipasto-style Salad, and thought the same technique would work. Instead of garlic, I grated a small onion. Instead of basil, I used cumin and thyme… And THEN I added about a quarter cup of mustard. This would make a nice, spicy vinaigrette for any salad, but it worked especially well with ham ‘n’ cheese! I followed the same process – boiled the pasta and while still hot, tossed it with about half the dressing. While that was chilling, I lightly fried the ham steak, cut it into bite-sized strips, and then tossed it with the rest of the vinaigrette. After the ham was cool, I added frozen peas to let them marinate as well. Once everything had chilled, I tossed it all together with the addition of grated cheddar cheese… As I had doubled the entire recipe, I had plenty to share with the neighbors who had inspired this dish – I think it’s a “keeper”! PS Since I had used a fairly soft cheese, by the next day it had virtually melted into the dressing - spreading the cheese taste to every bit of the dish - YUM!
